So, what’s a plantain? Glad you asked! It looks like a banana (it’s a relative) but it’s about three times the size and has its own unique taste. Today, we’re doing something very non-traditional with the humble plantain – making plantain bread!
It turns out that blending a plantain and using it in baked goods makes for a great flour substitute. When plantains are entirely green, the flesh actually tastes like a potato and adds texture only, not taste, to a recipe.
You’ll be amazed at how easy this five-ingredient bread recipe is! Just blend the plantains with eggs and a few more ingredients, pour into a loaf pan, and bake – that’s it! I love that there’s no yeast-proofing and no waiting for the dough to rise. And best of all, every ingredient is whole-food based.

Plantains can be found at most supermarkets or health food stores. Make sure you buy ones that are completely green on the outside. Once the plantains turn yellow, and then black, they become too sweet. Great for desserts and other toothsome dishes, but not bread (unless you want to use it for a Paleo Chocolate Loaf)!
I find that baked goods made with plantains tend to be prone to going stale quickly. However, I normally let this bread cool and then wrap it in a couple layers of plastic wrap and then put it in a plastic zipper bag. Pop it in the fridge and your bread will keep for days, especially if you only slice off one or two slices at a time, rather than slicing the whole loaf at once.
This loaf makes a yummy addition to your daily eats; make it on Sunday to have paleo bread slices all throughout the week! Plantain bread sandwiches, anyone?
- 3 green plantains
- 5 eggs
- 1/3 cup coconut oil, melted
- 1/3 t salt
- 2 T coconut flour
How To Make It
1. Preheat oven to 350° F.
2. Grease a loaf pan with a bit of coconut oil.
3. Peel and plantains and slice them.
4. Put all ingredients except for the coconut flour in a food processor.
5. Process until very smooth.
6. Add the coconut flour and process until mixed thoroughly.
7. Pour batter into the loaf pan.
8. Bake for 35-40 minutes.
9. Poke a toothpick into the center of the bread. If it comes out clean, the bread is done. Slice and enjoy!
